Chef Champ Jones, of Eleven Madison Park and The NoMad, is setting his sights on vegan cuisine with indulgent dishes like Porcini Risotto with barley and juniper; Sunchoke Salad made with roasted and pickled sunchokes; Tarte Flambe with maitake, and "parmesan" cream; and Black Plum Terrine with orchard fruit jam and housemade brioche. Jones' partner, sommelier Daniel Beedle, is focusing on minimizing waste by repurposing items on the menu. Look for cocktails like A Couple of Moments made with Old Tom gin, muddled sugar snap peas, lemon and hyssop. A selection of wines designed to complement the food are also available by the glass.
