Chef Michael White is spreading his wings with The Butterfly, a retro-chic cocktails and supper club in Tribeca. It is just the latest exciting restaurant opening by his Altamarea Group, which includes Nicoletta, Costata and Ai Fiori. At The Butterfly expect to be pampered with classic mid-century cocktails like a Brandy Old Fashioned made with Korbel brandy, house cherries and soda, which happens to be the state drink of Wisconsin, White's home state. You will also find updated versions of the Rusty Nail, Whiskey Sour and Mai Tai made with garam masala, Brugal 1888 rum, curacao and lime. Hors d’oeurves also pay tribute to retro American bar fare. Reuben Croquettes are stuffed with corned beef, sauerkraut and thousand island. Luscious Zucchini Pancakes are topped with with crème fraiche, dill & trout roe, while Ginger Shrimp Toast gets an added kick from sweet-and-sour duck sauce. Larger plates also pay homage to White's Wisconsin roots, like pressure Fried Chicken with honey biscuits and coleslaw, and a Veggie Pot Pie with peas and carrots, while a 10 oz NY Strip is served with fries and maître d'hôtel butter. Desserts range from the Little "B," a devil's food cake with a chocolate mousse filling and served with milk ice cream, and something they call the Coppa Cola; coca-cola ice cream, caramel popcorn and whiskey cream. - Thomas Rafael
