Very Fresh Noodles has moved into a larger space at Chelsea Market and continues to draw large crowds. Part of the thrill is watching the workers beat and stretch the noodles right before your eyes, turning them into dishes like Tingling Cumin Lamb made with signature "biangbiang" noodles and seasoned with cumin and sichuan peppercorns. There are Vegan Noodles with Mock Duck, bok choy and shiitake mushrooms, and Taiwanese Beef Noodle Soup with slow-braised beef shank and handpulled noodles. Another noodle dish, Dan Dan Mian, is served with Chinese hawker noodles and is very spicy (no exceptions).
