Deep in the back of Chelsea Market's food court is a small stand called Very Fresh Noodles. Behind some plexiglass is a guy snapping noodles against the counter, stretching them and the splitting them before being dunked in a cauldron of boiling water. It doesn't get any fresher than this. The noodles are used three different dishes. There is Tingly Cumin Lamb (or beef) served with the "biangbiang" noodles, heaps of cumin, Sichuan peppercorns, chili oil, celery and herbs. You can get it with soup or dry. This is the dish to get if you want something hot. Mock duck comes with book Chou and shiitake mushrooms in a rich mushroom broth with Shaoxing wine. But my personal favorite is the La Mei Taiwanese Beef Noodle Soup. It's not quite as spicy and it's loaded with the most delicious fall-off-the-bone beef shank I've tasted. Add in pickled mustard greens, cilantro and a touch of chili oil and you have one of the best soups around. No wonder people are lining up to get it.
