By Chloe is a vegan spot in the village serving up what it calls wholesome foods that energize without compromising flavor. The space is pretty luscious too with wide plank floors, colorful banquette seating, and a long sharing table. The tables always seem to be full and most days the line is out the door. Maybe it's the swinging chairs? If you swing on over you'll find a Kale Caesar with shiitake bacon, avocado and almond parm ($9.95), a Quinoa Taco with an agave-lime vinaigrette ($10.95) and a Spicy Thai salad with apricot-sriracha glazed tempeh, edamame and peanut dressing ($10.95). The Classic Burger ($8.95) is made from tempeh, lentil, chia and walnut (but you wouldn't know it) topped with beet ketchup, while smashed avocado toast is served with seasonal veggies on 7-grain bread. Soups are made fresh daily. Fresh juices and sold by the bottle or the shot. We also spotted dairy-free ice cream and raspberry tiramisu cupcakes that are gluten free.
