Calvert’s Opens Inside the Park Lane Hotel Overlooking Central Park

Calvert's is named in honor of Calvert Vaux, the co-designer of Central Park. Located on the second floor of the Parklane Hotel, the restaurant is positioned at Central Park South. The culinary team, led by Chef John Merry, has meticulously crafted both dinner and breakfast menus, blending traditional flavors with modern flair, in addition to a few playful dishes inspired by the park’s natural bounty.
“We are thrilled to introduce Calvert’s to both the local community and our hotel guests at Park Lane New York,” said Niles Harris, Vice President and Managing Director of Park Lane New York. “The restaurant is both timeless and contemporary, serving excellent food and drinks in a space that pays homage to one of New York’s most cherished landmarks.
In the evenings, Calvert’s offers an elegant raw bar and seasonal appetizers including a Shrimp Cocktail, Steak Tartare and a Grilled Octopus Salad. Mains see Steak Frites drizzled with chimichurri, Dry-Aged Steak served with house-made onion rings, and a Calvert’s Pasta, featuring bucatini topped with fragrant basil pesto, ricotta, breadcrumbs and toasted pistachios.
There’s also a special Park Lane Burger, featuring Australian Wagyu, caramelized onion, tomato, lettuce, and aged cheddar cheese. For dessert, diners can choose from classics like Chocolate Mousse, Cheesecake, and a selection of seasonal Sorbet and Gelato. As a parting treat, all diners will receive a savory takeaway snack, such as a mix of nuts, inspired by the flavors of Central Park, to enjoy on their next stroll through the park.
A dedicated Calvert’s Corner menu serves as the restaurant’s culinary tribute to Central Park, featuring two dishes and a cocktail crafted with seasonal ingredients commonly foraged in the park. The summer menu includes the CP Hotdog, featuring wagyu beef topped with sumac mustard and wild leek relish; a Wild Dandy Salad with wild dandelion, mustard greens, tri-colored quinoa, cherry tomatoes, cucumber, shaved baby carrot, and a lemon honey dressing; and a special Forager’s Find cocktail, made with rum, ginger beer, blackberry and lime.
Other cocktails include the Ramos Gin Fizz made with orange flower water, a White Negroni, and the Park Lane Margarita, which features hibiscus salted honey and a chili lime rim. These are served next to a line-up of expertly crafted mocktails and an extensive list of beer and wine.
For breakfast, diners can start their day with fresh and healthy offerings such as Avocado Toast tricked up with scallion, radish and pea shoots, customizable “Build Your Own” Omelets, and a Petrossian Smoked Salmon Plate fit with all the trimmings. Sweet options include Belgian Waffles topped with whipped butter, and Pancakes sprinkled with mixed berries and maple syrup.
