Celebrated Chef Dan Kluger’s Greywind Opens at Hudson Yards

James Beard Award-winning Chef Dan Kluger is launching Greywind, a vegetable-forward restaurant and bakery at Hudson Yards. By day, the bakery is serving fresh breads, pastries, sandwiches and grab-and-go items. By night, it is transformed into a Chef’s Counter with just eight seats serving a rotating tasting menu inspired by the season. There is also a full-service restaurant serving a total of 58 guests.

Kluger, a lifelong New Yorker, has worked with some of the city’s most notable chefs, including Danny Meyer and Tom Colicchio, and as Executive Chef of Jean-Georges Vongerichten’s ABC Kitchen. He went on to open Loring Place known for its market-driven dishes, and pizza spin-off, Washington Squares. Kluger is joined by Food & Beverage Director Chelsea Carrier (Eleven Madison Park), Executive Chef Caitlin Giamario (Loring Place, Boulud Sud) and Pastry Chef Jake Novick-Finder (Gramercy Tavern, Union Square Café).

Menu highlights include snacks like “Cheese-its” with pimento cheese and pickled peppers; Small Bites such as Grilled Louisiana Shrimp with chiles and Asian pear, and Chicken Liver Mousse with blood orange and charred onions.

Larger plates bring the Greywind Burger with cheddar “au poivre” mayo and rosemary potato chips; Local Sea Bream with Hon Shimeji mushrooms, snow peas and tarragon; and Lumache with Long Island duck ragu and swiss chard; among others. The Greywind Sundae served in a waffle bowl with hot fudge, caramel and candied kumquats is counted among the desserts.

Later this spring, Greywind will open Spygold, an intimate cocktail bar nestled below the restaurant, serving drinks with one-word names like Spritz (blood orange, gin, aperol, lemon and sparkling wine), Daisy (snap pea, mezcal, ancho reyes, serrano and lime, and Sour (dill, whiskey, lemon, lime and egg).

Greywind’s space by Parts and Labor Design (also designed The Panorama Room) resembles a modern farmhouse with floor-to-ceiling windows, elements of natural wood, bronze fixtures and linens. Artwork curated by Sugarlift is also featured along with custom aprons by New York-based menswear designer Todd Snyder, and handmade ceramics by Connor McGinn Studios.

Greywind is located at 451 10th Avenue in Hudson Yards. The restaurant is open Tuesday through Saturday, from 5:30PM to 9PM with reservations available on Resy. For more information, visit greywindnyc.com
