Chef Jeremy Salamon Brings Nostalgic Dining to Red Hook with Pitt’s

Red Hook just got a taste of nostalgia, thanks to James Beard-nominated chef Jeremy Salamon and his team at Pitt’s, the new restaurant taking over the old Fort Defiance space at 347 Van Brunt Street. Named after Salamon’s childhood nickname, Pitt’s brings an old-school vibe with a quirky twist, blending Southern flavors, classic bistro cooking, and a hefty dose of New York charm.

Pitt’s is all about memories—whether it’s family meals, travels down South, or the heyday of New York’s dining scene. Think white tablecloths, complimentary bread service (Hello, Warm Caraway Pull-apart Rolls with Butter!), and a must-order Soufflé with Maple and Cream that needs to be locked in early.

The menu doesn’t hold back on creativity. Start with Gouda Pimento with Fried Saltines or the retro-inspired Cold “Meatloaf” Tea Sandwiches. Want something bold? Try the Pickled Shrimp with Oyster Mayo or the Escargot stuffed with Green Goddess Cognac Butter. For mains, expect elevated comfort food like a Fried Country Captain Poussin with Carrot Ginger Salad, Grilled Mutton Chop for Two with House Fries and Mint Jelly, or Anchovy-Larded Swordfish Au Poivre. Sides like Carolina Rice Grit with Bottarga add to the excutement.

When it’s time for dessert, Pitt’s goes big with the Pixie Pie and a Hot Fudge Sundae with house-made ice cream. The showstopper? That pre-ordered soufflé, which might just steal the show for the entire meal.

Bartender Ben Hopkins (Momofuku Ssäm Bar, Please Don’t Tell) leads the bar with playful spins on classic cocktails. The Cosmo 75 gives you the best of both worlds with vodka, lemon, and bitters, while the Bullseye Margarita switches things up with addition of apricot liqueur. Feeling adventurous? Try the Negroni Sazerac or the Taeko Coffee, a nod to Fort Defiance’s iconic Irish Coffee.

Pitt’s interior is as much a trip down memory lane as the menu. Designed by Sydney Moss, the space mixes 1970s-inspired charm with fun, nostalgic touches. Think red leather banquettes, carrot-themed wallpaper, oil paintings, and vintage knick-knacks scattered throughout. It’s cozy, colorful, and utterly charming.

For now, Pitt’s is open for dinner Wednesday through Sunday, with daytime hours and brunch planned for later in the year.
