Cocktail Time: Paper Planes Speakeasy Takes Off on the Lower East Side

Ricky and Mariia Dolinsky, owners of "Tzarevna" on the Lower East Side, have created a new speakeasy hidden in a back garden space called, Paper Planes. The space, although tucked away, is airy and welcoming. It’s also where refined, balanced craft cocktails are being served.
The craft cocktail bar is a love letter to Ricky’s past as a mixologist. Not constricted by limitations of a single cuisine or people’s expectations, Paper Planes’ menu boasts 15+ original cocktails, made almost exclusively with house-made infusions and mixers, and a list of beloved classics done their way. Food and snacks that pair well with cocktails are also being offered.
Here are some of the house favorites:
Molotov Cocktail
(Horseradish vodka, jalapenos liqueur, cardamom, lemon, cinnamon syrup with smoked sea salt rim)
It's Raining Blokes
(English Pea Plymouth gin, strawberry shrub, lime, and velvet falernum)
Oaxacan Rose
(hibiscus tequila, grapefruit, lime, elderflower, crème du violette and sparkling rose)
The Room Where It Happened
(Cognac, crème de peche, cocchi vermouth di torino, and colonial bitters)
Paper Planes is also launching “Sunday Science” on its Instagram feed, where every Sunday they will share a cocktail recipe which might be a reinvented classic or a brand new cocktail.
