Drop the Chalupa! Tiny’s Café enters Chalupa wars.

Fans cheered when Taco Bell brought back a version of its chalupa earlier this year. Now a Brooklyn chef is weighing in with his own version. Chef Cenobio Canalizo, who hails from Puebla, has set out to bring an authentic version of the popular dish from his hometown to Tiny’s Cantina in New York. Chef Cenobio’s mother used to famously scratch-make and sell chalupas on the streets of central Mexico. Now he’s putting his spin on his mother’s recipe with salsa roja or salsa verde on a tortilla as well as manteca, guajillo, tomatoes, cinnamon, cumin, onions and garlic. He’s also using queso anejo, the “secret” hard-to-source ingredient that elevates these chalupas from other versions of the dish.
