European-style Bakery Pave Sets Its Sights on Midtown

Pavé, a European-style cafe/bakery from Chef Jonghun Won (Jungsik, La Tabatiere) and Jin Ahn (noreetuh, Jungsik, Per Se) is set to open in Midtown on September 21st. The goal of Pavé is to rekindle the art of baking bread fresh throughout the day through timeless artisanal simplicity. The shop is reminiscent of small bakeries found in Paris. The interior design features beautiful frescos adorning the walls throughout the space and hexagonal mosaic flooring.

Chef Won believes the most beautiful sandwiches begin with freshly baked bread filled with simple, sustainable, and organic ingredients. Fresh bread is baked throughout the day, including baguettes, multigrain, sourdough, and olive ciabatta. Fresh breads are available by the petit baguette or full loaf.

Look for sandwiches like the Saucisson Sec made with sliced dry sausage (pork) on a petit multigrain with salted butter and cornichon; Pan Bagnat with tuna, plum tomato, kalamata olive, grilled artichokes, and sliced hard-boiled egg on a petit olive ciabatta; and Croque Monsieur with melted gruyere and béchamel with ham and Dijon mustard on sourdough bread

Pastry options include Green Tea Scones with white chocolate; Brioche with passion fruit filling; and Marble Pound Cake, made with bananas, eggs, and swirls of chocolate; among others, all baked in-house daily. Coffee drinks from Counterculture Coffee are also available along with high-quality loose-leaf teas and non-alcoholic beverages.
