Gus’s Chop House Opens in Brooklyn's Carroll Gardens

Gus’s Chop House in Carroll Gardens is promising honest cooking. Co-owners Chris McDade and James O’Brien, known for their popular American-Southern and Italian joint Popina on nearby Columbia Street, are drawing inspiration from the chop houses of Europe and casual bistros.

The meal begins with snacks such as soda bread with cultured butter, East Coast oysters and shrimp cocktail to heartier fare like leeks à la wedge and hash brown with smoked trout roe.
Entrees include crispy dry-brined whole chicken and grilled mackerel with herbs, while chops range from leg of lamb to porterhouse and dry-aged New York strip carefully sourced from select purveyors. The chops are dressed in a brown butter jus before arriving tableside with choice sides like fries with aioli.
O’Brien’s value-driven beverage program is built for everyday drinking with a focus on wines from Rhone, Bordeaux and the Americas, as well as a curated selection of bottles under $100 that complement McDade’s cooking. The cocktail menu spotlights classics like martinis, manhattans, and negronis alongside craft beers and ciders.
Brooklyn-based neighbor Charles Grantham of Wood Steel Stone crafted the 11-seat bar with a cherry wood top, perfect for cocktails and conversation.
