Hudson Yards Heats Up With The Arrival of Papa San

Hudson Yards just got a whole lot hotter. From the duo behind Llama Inn and Llama San, Juan Correa and chef Erik Ramirez are back with their latest venture—Papa San, a high-energy Nikkei-style izakaya now open on the ground floor of The Spiral at 501 W 34th St.

Named in honor The Clash’s cult classic “Straight to Hell” and a nod to its Japanese-Peruvian roots, Papa San offers a wide variety of flame-kissed skewers, umami-packed plates, and cocktails with an edge. Ramirez, known for pushing the boundaries of modern Peruvian cuisine, delivers a menu that smokes, sizzles, and stuns—think bright ceviches, robatayaki-grilled anticuchos, luscious tiraditos, and a massive whole chicken yakitori experience that’s practically a rite of passage.

The drinks by Buenos Aires-based Tres Monos (ranked #7 on the World’s 50 Best Bars list) are just as daring —expect bold Latin-Japanese hybrids like the Papa Sour (Pisco, green apple, eau de vie, santal and rice rica) and the Misticollins (gin, sake, brown olives, and aloe vera). Or, dive into one of their sake, Pisco, and Japanese whisky lists.

Inside, the 146-seat space designed by INC Architecture & Design is an urban jungle where concrete meets cascading greenery with thirty-foot glass windows and traditional Peruvian textiles that pop against industrial textures. An open kitchen and sushi-counter-inspired bar put the action front and center. Plus, a private dining room (accessed via a dramatic spiral staircase) offers prime real estate for VIP gatherings.

Now open for lunch and dinner Monday through Saturday, with a 3-6 PM happy hour (weekend brunch and Sunday service on deck), Papa San is already one of the city’s most anticipated openings of 2025. Reservations? Get them now—walk-ins at the bar only.

Papa San is the first restaurant to open at The Spiral in partnership with Tishman Speyer, with two concepts from chef Gabriel Kreuther set to open in late 2025.
