La Marchande Opens in the New Wall Street Hotel

Renowned chef John Fraser has opened his new French brasserie, La Marchande, in the newly opened Wall Street Hotel (88 Wall Street), which sits on the site of the original New York Stock Exchange.
The dining room, which conjures a Café Society vibe, is highlighted by an ornately carved wooden bar that is accented with green marble, brass and antiqued mirrors, while pink marble tiles cover the floor in a scalloped pattern.
The extensive menu, co-created with executive chef Rick Horiike, includes Inventive rice paper rolls filled with unconventional ingredients such as Beef Tartare; Duck Breast Carpaccio; Grilled Lobster, an interpretation of Lobster Ameìricaine made with coconut milk; and Steak au Poivre prepared in a wok. Desserts including a Floating Island made with Japanese cheesecake and a Pandan-Coconut Gateau made with crepes, coconut crème and cinnamon-roasted pineapple.
In addition, there is a 120-bottle French-focused selection of wines and champagnes, as well as many specialty cocktails, including the Saffrantine, made with Vodka, Cap Corse Blanc and pickled baby eggplant, and the Pineapple des Charentes, made with Pineau de Charentes, pineapple, Bigallet China China, lemon and tarragon.
