Little Charli is Serving Up Roman Style Pizza in the West Village

Wood-fired Roman-style pies can now be found at Little Charli in the West Village made with recipes from Neapolitan pizzaiolo Salvatore Olivella. Olivello helped open some of the city’s top notch pizza joints, including Rossopomodoro at Eataly, Danny Meyer’s Marta and, Serafina to name a few.

Like all Italian households, everything is made from scratch, starting with the mother yeast and a 34-hour fermentation process giving the dough a perfect flavor and texture. Cherry wood is used to enhance the flavor while giving each pie a crispy crust with just the right amount of char.

The freshly-baked pies include a traditional Margarita, Snow White as the white pie, Diablo with Soppressata & Spicy Honey, and a show-stopping Chef’s Pie ($95) an ultra-luxurious, 3-foot long pie topped with prosciutto, burrata, arugula, shallots and topped with fresh truffle shavings. You can also build your own pies.

Other options include Calzones made with buffalo mozzarella, ricotta and roasted garlic or Chef Olivella’s tender Meatballs made with a proprietary blend of beef, pork, and veal passed down by his family that’s then cooked in the pizza oven with fresh ricotta. For something sweet there’s Uncle Fluffy’s Nutella S’mores Pie.
