Heap’s Ice Cream Drops New Sandwiches and Cakes This Week

Brooklyn’s Heap’s Ice Cream is revving up the dessert game just in time for spring with its first-ever lineup of ice cream sandwiches and ice cream cakes—a sweet new collaboration between Heap’s founder Matt Lieber and pastry chef Sarah Sanneh, co-owner of Pies ‘n’ Thighs.

Known for scooping nostalgic, super-premium ice cream from its sunny corner shop in Park Slope, Heap’s is now packaging the magic for your next birthday party, park picnic, or solo snack session on a stoop.

The new treats capture the playful, deeply satisfying spirit of the shop’s best-sellers, but in portable, party-ready formats. Here’s what to expect:

Ice Cream Sandwich Flavors

Confetti Cotton CandySprinkle sugar cookies with whimsical Cotton Candy ice cream, reminiscent of the ultimate birthday cake

Salted Toffee CaramelEnglish toffee sugar cookies paired with sophisticated Salted Caramel ice cream—perfect for all ages

Chocolate ChipA classic combination of chocolate chip cookies with Bold Vanilla ice cream, offering a satisfying bite

Each sandwich is $9.50 and designed in a rectangular shape for maximum handheld delight. Look out for limited-edition collab flavors coming this summer.

Ice Cream Cakes

Vanilla Chip Cake – Buttermilk chocolate chip cake layered with whipped confetti cream and Bold Vanilla ice cream

Chocolate Fudge Cake – Devil’s food cake with rich fudge and Vanilla Fudge Ripple ice cream

Cakes are available in 6- or 8-inch sizes (serving up to 10 ($55) or 15 ($80), respectively), and can be personalized with edible chocolate lettering. The optional Party Pack adds candles and Heap’s-branded plates for an extra festive touch.

Orders must be placed 48 hours in advance online or in-store at heapsicecream.com.
