Pusu Brings Modern Chinese Vegetarian Cuisine to Williamsburg

Púsù, a modern vegetarian Chinese restaurant that combines Chinese vegetarian cuisine and innovative design in a warm and intimate setting, is now open in Williamsburg, Brooklyn.

Translating to “uncut gems” (璞玉) in Chinese, Púsù seeks to embody the allure of raw and natural elements, in a serene and unpretentious atmosphere. The restaurant boasts a spacious, open-air layout with a minimalist designe to evoke the "harmonious coexistence of nature and the modern world."

Head Chef Owen Liu is employing an innovative cooking style with an array of dishes influenced by Northwestern, Hangzhou, and Cantonese cuisines. Highlights include Spinach Stacks with Sesame & Spicy Mustard Sauce, Beetroot & Fennel Salad, Eggplant Purée with Bao Cui (Chinese Cracker), Tri-Color Cold Noodles, Tai Chi Soup, Sweet & Sour Beyond Pork, Pineapple Fried Rice, and Mapo Tofu Pumpkin Stew.

Cocktails come in four categories - Farmland, Forest, Garden, and Orchard. They include Celery (celery bitters, Gentian liqueur, Roku Gin); Sea fennel (sea fennel brine, Italicus, cardamom-infused Neptunia, Super verjuice); Osmanthus (candied hibiscus, Hawthorn-infused Aperol, club soda, prosecco), and Blueberry (cold brew coffee, Italicus, coffee liqueur, Haku vodka, blueberry, and Biscoff garnish).

Several bar snacks are also being offers, including Deep-Fried Mushrooms with Salt & Pepper, Chef Liu’s veggie-focused answer to truffle fries.
