Spring Awakening at Figaro Café in Greenwich Village

At a recent spring soirée hosted by the iconic Figaro Café in Greenwich Village, guests were treated to a first taste of the restaurant’s refreshed seasonal menu under the direction of Executive Chef Hailey Nissimov.

The new dishes reflect Nissimov’s global influences and creative spirit, honed at Michelin-starred Shmoné and shaped by her multifaceted background in the arts. A standout of the evening was the Hamachi, served crudo-style with citrus and spring herbs—delicate and bright. Another chef favorite: a comforting yet elegant chicken dish paired unexpectedly and perfectly with sweet grapes, proving Nissimov's knack for subtle twists on American classics.

Of course, no spring menu launch is complete without a cocktail to match the season, and Figaro delivered with “The Butterfly”—a fresh, floral-forward drink topped with a honey-dipped crisp and an edible butterfly perched delicately on top. Created by beverage director Jeremy Le Blanche, it was the kind of drink made to be photographed (and then promptly sipped inside or al fresco).

With its storied past and forward-thinking kitchen, Figaro is writing a new chapter in New York dining—one that’s equal parts heritage and haute.
