Sushi Ginza Onodera reopens after year-long pause

After a year-long pandemic pause, Michelin starred Sushi Ginza Onodera has reopened with new Head Sushi Chef Takuya Kubo, who comes to NYC from Sushi Ginza Onodera in Honolulu. A native of Hokkaido, Japan’s northernmost island known for its superior seafood, Chef Kubo began his sushi training in high school at 15. He spent a decade at Sushiden in Tokyo, before joining the Sushi Ginza Onodera Group.


Uni

Chef Kubo keeps true to traditional Edomae-style sushi and techniques of aging, curing and preserving fish that develop umami flavors and create a more tender texture, as well as the use of koshihikari rice seasoned with two different types of red vinegar, one dark and one light, that give it a light brown hue.

His new menu showcases the best seasonal fish from Japan’s Toyosu Market (formerly Tsukiji), which includes refreshing Kegani Hairy Crab with caviar and tomato gelee; lightly seared tataki-style Katsuo (bonito aka skipjack tuna) with garlic chips, sesame, ginger and shiso; earthy, and slow-simmered Tako octopus with yuzu pepper jelly.


Japanese Surf Clam

Guests will also find dishes like grilled Kinki rockfish marinated in light Saikyo miso from Kyoto; along with Sushi Ginza Onodera’s signature Uni and Ikura Chawanmushi, a delicate egg custard with sea urchin and salmon roe.

Lunch offers a Michelin experience without breaking the bank with omakase menus at $100, $150, $200; dinner from $300; service included in all menus (gratuity not accepted).
