Details: Torishin in Hell's Kitchen is well known for its yakitori - skewered chicken - cooked over hot coals. Every bit of the chicken is used; breast, thigh, wings, skin, livers, hearts, gizzards and more. A variety of sauces are available; a citrus-pepper sauce called Yuzukosho; soy with sake and mirin called Yuan Sauce; and Saikyo Miso, a sweet miso sauce from Kyoto. But the main sauce, caled Tare, is made especially for Torishin. Other meats, including pork belly and duck are also available, along with vegetable skewers.
