A New Dessert at La Devozione That Sophia Loren Could Love

La Devozione, the newly opened Italian spot at Chelsea Market, is welcoming guest Executive Pastry Chef Angelo Tramontano of Gran Caffè Napoli 1850 for an appearance January 14th at The Oval, the restaurant’s open-air kitchen.
Beginning at 6 pm, Chef Angelo will present his dessert tribute to Italian actress, Sofia Loren, aptly named "Donna Sofia" – a Neapolitan pastry sfogliatelle with shortcrust pastry biscuit, ricotta emulsion, semolina, candied cubes, cinnamon, and orange.
"My philosophy? A dessert is an idea, a study, research and execution, and can arouse a different and subjective emotion for each guest ," said Tramontano." Behind every dessert of mine, there is always a project that presents food from an aesthetic, communicative and representative point of view, in which science, technology, aesthetics, and nutrition play an essential role."
The chef says serigraphs and prints of iconic images enter directly into his single portions whether it’s an image of Sophia Loren or the old Mille Lire.
