Fulgurances, Laundromat brings rising star chefs to Greenpoint, Brooklyn

After five years flourishing in Paris, Fulgurances is bringing its chef residency program to Greenpoint, Brooklyn. Like the Parisian original, New York’s Fulgurances, Laundromat will serve as an incubator for young international chefs who’ve worked in some of the world’s most exciting kitchens but not yet opened their own. Each chef resident will take over as executive chef for the 3-to-6 months at the 34-seat Greenpoint restaurant.
The first Fulgurances, Laundromat chef resident will be Chilean Victoria Blamey (Gotham Bar & Grill, Chumley’s) fresh off her residency at Blue Hill Stone Barns. Victoria will offer an ever-evolving 5 to 6 course prix-fixe dinner for $80, with an optional wine pairing for $50.
The seasonal dishes will speak to Blamey’s multicultural cooking experiences in some of the finest restaurants around the world (Mugaritz, ABaC, Atera, and Corton++). The initial menu includes such things as pit-smoked mussels called Cholgas Secas, White Asparagus and Whey, and a thick squash stew called Locro. The wine list is French + natural-leaning with some pours that are exclusive to Fulgurances. Reservations available via resy.
