Michelin-Starred Benno Reopens at Evelyn Hotel

Chef Jonathan Benno’s Michelin-starred restaurant Benno is reopening after a nearly two-year absence due to the pandemic. Benno’s return to the Evelyn Hotel in NoMad adds a new fine dining establishment to New York’s restaurant scene with an emphasis on seafood. It follows the opening Bar Benno, a more casual concept in August.
“As a longtime New York Chef with two concepts under one roof, I want to be part of our city’s comeback,” says chef Jonathan Benno. “Both Benno and Bar Benno have my name because they truly reflect my passion for French cuisine and seafood. These restaurants also represent my commitment to New York City, the city that I call home.”
Executed by Chef de Cuisine Mark Zuckerman, the meal begins with a selection of snacks including Fondue of Jonah Crab (top) with sea urchin and vadouvan, Sea Scallop with Noilly Prat, fennel and orange, and Caviar Service with Regiis Ova Caviar.
Vegetables take center stage at the new Benno, with the return of the Coddled Egg with chanterelles and brown butter, Carnaroli Risotto with lobster mushrooms and castelrosso, and Chicory Salad with Ossau Iraty, beets, walnuts and apple.
Appetizers run the gamut from Rabbit Confit Terrine with bottarga, endive and almond to Big Eye Tuna with sea urchin, seaweed and sesame, and Squash Soup with sautéed foie gras, hazelnuts and pomegranate.
Pasta also looms large with offerings like Agnolotti with celery root, black trumpets and puffed einkorn and Russet Potato Gnocchi with Jonah crab, smoked trout roe and chili oil. Main Courses include Lobster Americaine with lobster mushrooms and fennel, Steak Au Poivre with careflex cabbage, pommes puree and peppercorn sauce, and Pekin Duck with sautéed foie gras, pear, radish, chestnut and spiked duck jus.
Dessert brings Gala Apple Cake with oat streusel and brown butter ice cream, and eau de Noisettes with hazelnut dacquoise, chocolate sponge cake and chamomile-crème fraîche ice cream.
Upscale New York inspired cocktails are also being offered like The Duke of Provence, a play on the Duke's martini, Death in the Afternoon with absinthe verte and champagne, and NY Sour with bourbon, Japanese whisky, lemon, egg white and Beaujolais.
