NEW COCKTAIL BAR ETEREA OPENS IN EAST VILLAGE

Etérea Coctelería y Cocina, a new cocktail bar devoted to tequila and mezcal by producers who are ethical to their people and the planet, has opened at 511 East 5th Street. The restaurant seats 52 people indoors (at full capacity) and another 24 diners in its soon-to-open backyward.
Mixologist Sother Teague has created 36 exuberant cocktails and curated a list of 30 tequilas and mezcals that celebrate the full flavor spectrum of these noble agave spirits, and these drinks are complemented by original, plant-based Mexican small plates by Executive Chef Xila Caudillo.
All of the cocktails (priced at $16) conjure the flavors of Mexico with ingredients that include chile peppers, molé, cilantro, hibiscus and pepitas. Other notable ingredients in these luscious libations include horchata syrup, absinthe, grapefruit bitters, amontillado sherry, corn milk and hot sauce.

Chef Xila’s menu is highlighted by Aciento Tacos, made with mushrooms, and Zucchini Tacos made with fried smoked cheese. Other delicious delights include corn ribs elote, guacamole, a tostada with marinated tomato, cauliflower in ranchero sauce, and corn pudding served with rosemary meringues, candied pecans and blackberries.
