New York’s first sous vide dark assembly kitchen

Cuisine Solutions is partnering with Pret A Manger to debut its first Sous Vide Dark Assembly Kitchen (DAK) in New York City, promising "Michelin-starred flavors." The ready-to-eat delivery concept is offering chef-inspired favorites such as Harissa Charred Octopus Tzatziki Mezze, Sirloin Steak Tartar, and Duck Leg Confit with Oaxacan mole.

Several different concepts are offered including:

♦ Cocina Oscura and Mediterranean, Mexican and Mediterranean build-your-own custom-style bowls, salads, and wraps, and chef-driven dishes such as herb-roasted half-chicken bathed in sherried walnut sauce, with pomegranate and herbs.

♦ Poultry in Motion, Sous Vide Egg Bites as well as chicken prepared in a variety of ways like five-spice Peking.

♦ Bodega, chef-driven, high-end, and ready-made meal components prepared using sous vide that arrive to customers fully cooked like Grilled Salmon with White Beans with Thyme and Garlic.

♦The Cutting Edge, global, chef-inspired favorites including Duck Leg Confit with Oaxacan mole.

According to a release, Cuisine Solutions creations are fully cooked, pasteurized and vacuum-sealed. By using this method, CS DAK streamlines operations in a smaller kitchen footprint, therein reducing labor costs and minimizing food waste, while increasing operational efficiency, safety, and consistency, and allowing for multiple concepts to run out of a single kitchen.

Everything will be prepared in Pret A Manger at the 425 Madison Avenue location and will be available for delivery throughout Manhattan on Uber Eats, Grubhub, DoorDash, Postmates and via the website, order.csdak.com
