In honor of Filipino American History Month, Filipino-American chef Leah Cohen is putting a personal spin on a regional classic at her restaurant Pig & Khao on the Lower East Side.

In a fusion of flavors reminiscent of the buzzing streets of Manila, Chef Leah pays homage to one of the Philippines' most beloved fast-food treasures: Jollibee's Chickenjoy. But this isn't your ordinary fried chicken. Cohen’s dish infuses the essence of Filipino cuisine into every crispy, golden bite.

"Growing up with Filipino roots, the flavors of the Philippines hold a special place in my heart” says Chef Leah. “I wanted to create something that not only celebrates my heritage but also gives our guests a unique and unforgettable dining experience. Recreating my own version of the ChickenJoy is my way of sharing the love I have for Filipino cuisine and the joy of Jollibee with everyone.”

Served alongside the crispy chicken is a “gravy” boasting a mostly savory flavor profile that combines elements of umami, sweetness, and a hint of meaty richness.
