This Valentine’s Day, Tyler Malek – head chef and co-founder of Portland’s Salt & Straw ice cream – is teaming up with chefs Mary Attea and Camari Mick of Michelin-starred The Musket Room in New York City for an unforgettable Valentine’s Day experience, highlighting a frozen element in every course of the meal for one-night only.

Called “the Willy Wonka of ice cream,” Tyler is known for pushing the boundaries of creativity, and to date has created over 1,500 unique flavors for Salt & Straw, with a chef-driven approach that prioritizes using the best organic and sustainable ingredients possible, working closely with local farmers and artisans. This collaboration with Musket Room’s Executive Chef Mary Attea and Executive Pastry Chef Camari Mick is a rare opportunity to experience Tyler stretching the boundaries of ice cream – in both classic and unexpected ways – making for an unforgettable date night this Valentine’s Day.
The seven-course menu will feature original ice-cream dishes in both sweet and savory renditions, including:
• Kristal Caviar with Creme Fraiche Semifreddo & Horseradish Snow
• Shigoku Oyster with Green Peppercorn & Plum Vinegar Granita
• Brioche Heart with Saffron & Brown Butter Gelato
• Japanese Hamachi with Cured Trout Roe, Bleeding Heart Radish & Yuzu Dippin’ Dots
• Romanesco with Caramelized Cauliflower & Muscat Grape Hazelnut Semifreddo
• Heritage Pork with Kabocha, Khadrawy Dates, Baharat & Preserved Lemon Shaved Ice
• Choco-Taco Masa Mille Feuille with Mole Semifreddo & Peanuts

The Salt & Straw x Musket Room collaboration dinner will be held at Musket Room [265 Elizabeth St, New York, NY 10012] on Tuesday, February 14. Ticket prices are $145/person, with an option to add a beverage pairing. Reservations are available via Resy.
