Sushi AMANE names new Executive Chef
June 21, 2021, 5:43.40 pm ET
Sushi AMANE, the Michelin-starred sushi restaurant, has reopened with Tomoyuki Hayashi as its new Executive Sushi Chef. Chef Hayashi apprenticed under top sushi masters in Tokyo for many years before leaving Japan to seek opportunities in America. Most recently he served as Executive Sushi Chef at Sushi Azabu in Tribeca.
At Sushi AMANE, Chef Hayashi will have full reign to put creativity on display with some surprises in store for diners like nama-yuba and Japanese uni with Kaluga caviar. Chef Hayashi’s omakase experience features wild fish imported from Japan and other countries. It consists of four small dishes, nine Nigiri, tamago, hand roll, and miso soup. The menu changes daily based on market availability.
Sushi AMANE is an eight-seat sushi bar concealed within MIFUNE’s subterranean dining room. The omakase sushi experience is priced at $200 and will have two seatings daily Tuesday through Saturday, at 6pm and 8:30pm.
Sushi AMANE is located at 245 East 44th St, New York, NY (212) 986-5300
