Vegan bistro Willow by Beyond Sushi team is coming to Chelsea

Vegan bistro Willow is calling Chelsea home. Beyond Sushi's Executive Chef Guy Vaknin and his wife Tali are opening the spot. It will offer classic American dishes for takeout and delivery in mid-January with indoor dining to follow once restrictions are lifted in New York City. The new space is focusing on vegan comfort foods.

The menu includes finger foods like Cauliflower Wings with choice of BBQ or buffalo sauce, Coconut Ceviche served with taro root chips, and taquitos with chili-infused Impossible meat with charred tomato salsa.

Several sandwiches are offered, like the Meatball Sub with Impossible "meatballs," Hickory Smoked Burger and Buttermilk Fried Chick'n with horseradish aioli on a brioche bun.

Diners will also discover assorted salads including a Cobb, Caesar and Greek version, along with larger plates of Eggplant Lasagna, “Scallop” Cacio e Pepe with oyster mushroom “scallops,” and Steak Frites with grilled seitan steak, wild mushroom demi-glace and green peppercorns.

The Vaknin family launched their well-known vegan chain Beyond Sushi in New York City in 2012, expanding to five locations and garnering widespread support for their innovative take on sushi among other signature dishes. Chef Guy's globally inspired plant based cuisine encourages a healthy way of living, and incorporates unconventional flavors and techniques.

Chef Guy Vaknin credits his love of cooking to his Moroccan grandmother. Raised in a big family, food was always the center of their weekly gatherings. The space, designed by Studio RB, features white marble tabletops and plush velvet seating, with recycled barn wood, royal blue and gold accents.

Willow is set to open on January 15th. To celebrate, it is offering a complimentary dessert to anyone who places an order of $25 or more on opening day via the restaurant's website. Additionally anyone who purchases a $100 gift card for Willow (or Beyond Sushi) between January 15th and February 15th will get another for $25. Delivery is available via Postmates, Uber Eats, GrubHub/Seamless, Doordash and directly through the Willow website.
