Kaiseki Room By Yamada Opens In Midtown

Chef Isao Yamada, formerly of Brushstroke, is returning to the NYC kaiseki stage with the opening of the Kaiseki Room by Yamada serving high-end Japanese cuisine. As part of The Group, Kaiseki Room by Yamada will be a sister restaurant to the acclaimed Omakase Room by Mitsu, located in the West Village. Together, the two restaurants will be referred to as Washoku Rooms, named after its time-honored Japanese cuisine with seasonal influence.
Chef Yamada is currently one of only a few chefs currently working in New York who have trained at an authentic kaiseki Michelin three-star restaurant based on the tea ceremony in Kyoto. While Executive Chef at Brushstroke from 2010 until it closed in 2018, Chef Yamada collaborated with Chef David Bouley to present a kaiseki menu that incorporated French techniques. Now, at Kaiseki Room by Yamada, Chef Yamada is pursuing his vision of the depth and breadth of taste while incorporating innovative methods of ingredient preparation, in his formal style of this Japanese cuisine inspired by the traditional tea ceremony and the true spirit of kaiseki.
The fall menu includes several signature dishes including OTORO with Toro Tartare & Oscietra Caviar, GINMASU with Tomato Cured Hudson Valley Silver Trout, CHAWANMUSHI with Hokkaido Uni & Horsehair Crab, and DOBINMUSHI with Autumn Mushrooms & Abalone in a Guinea Hen Broth.
The 20-seat kaiseki restaurant (a combination of 12 counter seats and four tables for two) will offer a multi-course tasting menu ($300 per person) of Chef Yamada’s masterfully prepared, show-stopping dishes that honor each fresh ingredient with the utmost appreciation and care. The menu will evolve frequently, offering something new for returning guests to try. A beverage pairing of sake, wine and shochu is also available in addition to a la carte beverages.
The unique space by designer Julien Legeard of The Prestige Group includes woodwork by Pierre Renart, a designer and cabinetmaker from France who worked with the design team, and utilized curved natural woods to create a cocoon-like space giving guests a feeling of intimacy and care - a striking oasis from the hustle and bustle of Midtown.
