
We first encountered Gabriel Lamonaco back in February, who in the middle of a pandemic, was bartering his "unregular pizzas" with New Yorkers through his Instagram page. What made the pizza so special was the length of time it took to make the crust - 96 hours for the leavening process to be complete. What also made them stand out were the different flavor combinations.

Fast forward to today, and Lamonaco now has his first brick-and-mortar location near Union Square on 4th Avenue between 13th and 14th Street. A gleaming Lamonaco appears to be off to a booming start with a large crowd waiting to try his pies when we paid him a visit. And this is what they are coming for:

Delicatissima - Cherry tomato confit, mozzarella, pancetta, in a wine reduction sauce.

Burrapizza Pugliese - Broccoli rabe sauce, cherry tomato confit, whole burrata, sundried tomato sauce and orecchiette crunch.

Burrapizza Cofonata - Tomato Sauce, all natural pepperoni, house hot honey, whole burrata and nudja sauce.

Prochute - Prosciutto di Parma, mozzarella, parmigiano reggiano, sundried tomato sauce and arugula.
Prices range from about $5 a slice up to $13 for more elaborate pies on the menu.
