Parma, an Upper East Side stalwart, is now known as Parma Nuova, with a focus on the flavors of Parma Italy in a more relaxed setting. Giorgio Manzio, formerly of La Masseria, is fulfilling his dream of owning his own restaurant after learning how to provide top notch service at Da Silvano and La Cirque.
The menu features hand-made pastas such as Cappellacci all’Emiliana, veal-stuffed pasta native to Parma similar to large tortellini, and Ravioli di Mamma Teresa filled with ricotta cheese and spinach served in a light tomato sauce. The dish is named after Manzio’s mother who made fresh ravioli every Sunday. Entrees include Galletto al Mattone, a brick-pressed, grilled Cornish hen seasoned with fresh herbs; and grilled salmon filet served with grilled zucchini and mustard sauce.
The wine list consists of 80 selections from Italy, with a mix of old world and new world wines. Cocktails include the Eastsider made with Bombay Gin, fresh cucumber, basil and freshly squeezed lemon and lime juice served on the rocks with a splash of soda
