The Chemistry Room at Sushi Lab Opens at Hotel Sanctuary

The Chemistry Room at Sushi Lab is opening at the Hotel Sanctuary (130 West 47th Street). Offering 10 seats at its chef’s counter and table seating for an additional 20 guests, the Chemistry room will offer a brand-new omakase menu featuring 13 courses including smokey miso soup served in a beaker, nigiri pieces, a tuna flight, A5 Wagyu, dessert and matcha green tea. The menu will cost $100 per person.

The restaurant will also boast a new signature cocktail menu that will include Mr. Chiri with tequila, yuzu, red chili peppers and cilantro; Shiso Pretty with sake, tequila, lemon juice and shiso leaves’ Morning Glory with gin, basil, grapefruit syrup and egg white; Smoky Old Fashioned with rye whiskey, simple syrup and bitters; Pearfection with soju, pear puree, lemon juice and pea flower syrup; Sakura Bliss with blueberry, rum and fresh lime; and a Whiskey Sour with bourbon, yuzu, egg white and bitters. Sake will also be served by the glass and bottle in addition to beer and wine.

It joins the hotel’s popular Sushi Lab Rooftop, a 40-seat eatery perched at the top of the hotel. Both restaurants boast a creative spin on traditional sushi from Executive Chef Frankie Chen.
