Passerine to Take Guests on a Culinary Adventure Through India

Seasonal Indian restaurant Passerine, located in Flatiron, will launch its highly anticipated seven-course tasting menu on February 11, with Chef Chetan Shetty at the helm. The menu promises a North to South journey through India’s diverse culinary regions, celebrating lesser-known heritage dishes elevated by peak winter ingredients.

The journey begins in Uttarakhand with a playful Pakora of fermented lentil and jamon before venturing to Kashmir with a reimagined Shufta, a Kashmiri warm dessert turned savory salad of walnuts, cranberry, and fenugreek-braised chicken, crowned with winter radicchio.

Central India shines with Malai Toast, a spiced cod creation from Uttar Pradesh with chickpeas and green garlic. From the Awadhi region comes Khurchan with lamb masala, yogurt rice, and fermented chilies. The bold flavors of Hyderabad take center stage with Dalcha, featuring 16-hour braised beef short ribs, squash, okra, and mint, served alongside flaky Parota bread.

To end on a sweet note, Southern India inspires a refreshing Mangalorean Ginger and Buttermilk Ice Cream infused with lime leaf oil, followed by a Valentine’s week special dessert: Khoa, a Maharashtra-inspired chickpea, strawberry and chocolate tart with cardamom.

The $135 per person menu includes optional wine or non-alcoholic pairings, and a vegetarian version is available for $120, ensuring all diners can experience this culinary journey. Reservations open January 12 on Resy, offering a front-row seat to this winter wonderland of Indian flavors.
